(Works great as a dipping sauce for Green Chile Chicken Wings!)
I love this bold and flavorful sauce, and it’s become a staple in the Mountain Man Gourmet home. You can use it on Huevos Rancheros, Smothered Burritos, Enchiladas, and more. Use it as a dipping sauce for Green Chile Chicken Wings – check out the recipe here. Scoop some onto a burger, or mix it with sour cream and mayo or yogurt for a crowd-pleasing dip!
What You’ll Need
- 6 T. Go-Go Green Chile Spice Blend
- 4 cups chicken stock
- 1 T. fresh or 1 t. dried oregano
- 4 t. butter or vegetable oil (can substitute bacon grease for extra flavor)
- 2 onions, finely chopped
- 4-6 cloves of garlic, finely chopped (I like mine extra garlicky)
- 2 T. flour
How to Prepare
Heat oil over medium heat in a skillet or sauce pan.
Sautee onion and garlic for until onion is translucent.
Add Go-Go Green Chile Powder, oregano, and flour; mix thoroughly.
Add chicken stock in small batches; be sure to keep stirring so you don’t end up with lumpy sauce!
Bring to a boil, then reduce heat and simmer for 15-20 minutes, stirring frequently. The longer it simmers the thicker the sauce will become.
Let cool, then use in your favorite recipes.
You can store this sauce in the refrigerator for 4-5 days, or freeze in small batches for later use.
