Mountain Man Gourmet Featured Blog of the Week: BudgetBytes.com

Each week, we at Mountain Man Gourmet love sharing some of our favorite food blogs. This week’s featured blog is Beth Moncel’s BudgetBytes.com, where you can learn how to cook great meals without shelling out a lot of cash.

Beth says she likes to cook because it’s the perfect combination of her two favorite subjects: art and science. (She’s a former microbiologist and holds degrees in both Clinical Laboratory Science and Nutritional Science from Louisiana State University.)

Don’t worry, though; you don’t have to be a scientist to prepare her easy and budget-friendly recipes.

Like our Mountain Man-in-Chief, Lawrence Clark, Beth teaches folks to cook delicious and (mostly) nutritious food on a small budget. She loves to give confidence to new cooks and help inspire people to learn how to cook and reduce their dependence on the prepared food industry.

She’s been featured on the Food Network Snapchat Channel, Oprah.com, GoodHouseKeeping.com, and more.

On her site, you’ll find mouth-watering recipes such as Baked Chicken with Artichoke Hearts and Tomatoes (pictured below), Tomato Herb Rice with White Beans and Spinach, Slow Cooker Coconut Curry Lentils, and Cowboy Caviar (I won’t spoil the surprise).
